Best Recipe for Broccoli Salad
Since Broccoli is on sale this week I thought I would share my favorite recipe for a broccoli salad that I bring to many family functions. I get requests all the time. Like: bring that broccoli salad to the Father’s Day picnic. Or, I get requests for a recipe for broccoli salad from people on their way to work. So, I can highly recommend it and am happy to share it with you.
Gretchen’s Broccoli Salad
1 pound bacon, fried and drained
3 bunches broccoli, finely chopped
1/2 cup raisins or crassins
1/2 cup sunflower seeds, (can also use pumpkin seeds or sesame seeds)
1 medium red onion
1/2 cup Hellman’s Mayo
1/4 cup raw sugar
1/4 cup Bragg’s Apple Cider Vinegar
Mix your mayonnaise, sugar and vinegar and set aside. Leave to combine for 20 – 30 minutes.
Mix in your broccoli, grapes, sunflower seeds and onion. Then pour the mixture on top, then sprinkle with fried pork.
Mix everything together and refrigerate overnight. You can do it in one day if you have at least 5 hours to put the flavors together. This is not a low-calorie or low-cholesterol diet. But it is very filling and satisfying. You’ll stay away from the dessert table because you’ll be so full.
If you prefer, you can substitute agave nectar for 1/4 cup of raw sugar. Or you can use a powdered sugar substitute like splenda or stevia. I use the rule of thumb: 3 packets and then I test them…to see where I like them. Otherwise, you can make a delicious and artificial substitute. Some people think they can change the recipe and promise they can change it, but I can’t. But maybe I’m just used to it.
Another way to reduce the calories in this recipe is to use turkey bacon instead of real bacon. About half the calories. But I don’t care how it tastes. You just have to pick and choose your battles, so to speak. It’s better to cut the amount of bacon in half, or half a pound (8 ounces) of regular bacon, and get the best flavor.
You can also use Hellman’s light mayo instead of regular mayo. Also, cut the carbs in half. You have to be careful about the consistency of the water if you choose to do that. So, be careful and always use the light version of the mayo.
