After struggling with weight for a long time, I’ve realized that I’d rather have a small sweet cookie every now and then than a bunch of tasteless substitutes, even if they’re supposed to be healthy. I am a survivor of the “Snackwells” era, where I believed I could eat boxes of these wonderful things without guilt. I just managed to gain weight when I couldn’t get enough!
Now that I’m older, I’m a little wiser. I know what works for me – real food in a healthy balance. And speaking of indulgences, I’m on the lookout for foods that satisfy my taste buds and my craving for good goodness.
It’s important to remember that chocolate chip cookies are surprisingly low in flavor. It will never be a very healthy food, and it can only be made healthy, before it starts to lose its flavor.
How to Make Sweet Strawberry Cookies
There are many things you can do to lighten cookies and increase their nutritional value. Here are some of my favorites:
- Use less fat or healthier fats
- Replace some of the fat with apple or yogurt
- Replace all or some of the flour with whole wheat or another wheat flour
- Add some oats, nuts, seeds, and/or dried fruit
- Add some flax seeds
- Use dark chocolate chips
- Replace all or part of the sugar with a natural sweetener such as honey, maple syrup, brown rice syrup, or sucanat (dried coconut water).
- Add a healthy fruit or vegetable such as sliced cucumber, mashed banana or pumpkin puree.
Almond Butter Chocolate Chip Cookies Recipe
Makes about 24 cookies
These cookies have a lot going for them – low sugar, dairy free, gluten free, easy and delicious. It only takes 6 ingredients to make delicious and warm out of the oven chocolate chip cookies in 30 minutes or less. They call for Sucanat – dried cane juice – but you can use just plain brown sugar.
1 cup almond butter
3/4 cup Sucanat
1 large fruit
1/2 teaspoon baking soda
1/4 teaspoon sea salt
3 ounces dark chocolate (at least 70%), broken into small pieces
Preheat the oven to 350F degrees. Line baking sheets with parchment paper or silicone mat.
In a medium bowl combine the almond butter, Sucanat, egg, baking soda and salt until combined. Mix the chocolate pieces together until incorporated into the mixture.
Drop rounded tablespoons of dough onto lined cookie sheets, leaving 2 inches between cookies. Bake for 10 to 12 minutes or until lightly browned. Remove from the oven and cool on the baking sheets for 5 minutes and transfer the cookies to wire racks to cool for another 15 minutes.
