Two Chia Seed Protein Pudding Recipes

I was introduced to chia seed pudding a few years ago and instantly fell in love. A healthy alternative to regular pudding? Yes please! I like to “healthy” my favorite not-so-healthy-for-you foods so this is right up my alley. I tried a few chia seed pudding recipes and started developing my own. Most of the recipes I found didn’t have protein added to them so I decided to boost mine with protein. Chia seed protein pudding packs a healthy punch. It is loaded with healthy nutrients that make it a great choice for a healthy breakfast or dessert.

Chia seeds are a good plant-based source of omega-3, calcium fiber and iron. They also have small amounts of phosphorus, manganese, potassium and copper. I love their “crunchy” texture. They almost remind me of cassava but they are healthier for you.

Chia seeds can be eaten raw or cooked. I recommend eating them after they are either soaked (as in a pudding recipe) or cooked because these seeds expand when they are hydrated. Eating them dry can cause them to expand in your throat which may give you a slightly weird feeling. One of the big benefits is the fiber content which will help give you a feeling of fullness which leads to a better feeling of fullness.

Protein Chia Pudding Recipe 1: Vanilla, Almond + Coconut

Dish 4:

8 Chia Seeds T

2 C Almond Milk (or milk of choice)

2 T Madagascar Vanilla Extract (I like this vanilla extract because of the deep flavor.)

4 T Grated Coconut (add a little extra to sprinkle on top)

2 T Maple Syrup (or honey)

4 Scoops Protein Powder (I used grass fed vanilla whey but you can use your favorite animal or plant based protein powder – about 20g per scoop)

4 T Almonds

*If you like a creamier taste, use vanilla flavored almond milk or roasted coconut almond milk by Califia farm for a richer taste.

How to:

– Mix the seeds, almond milk, vanilla extract, coconut and maple syrup until well combined.

– Add the protein powder and mix with a whisk to break it up. Continue mixing until you don’t have any lumps of protein powder in the mixture.

– Pour evenly into 4 cups and put in the fridge for about 15 minutes.

– Remove from the fridge and stir each chia seed protein pudding to make sure the chia seeds are fully incorporated (sometimes they will sink to the bottom).

– Return to the refrigerator and leave for a few hours or overnight until the mixture becomes a pudding or gel.

– When ready to eat, sprinkle extra almonds and coconut on top and enjoy.

Protein Chia Pudding Recipe 2: Double Chocolate Chocolate

Dish 4:

4 Scoops Chocolate Protein (animal or plant based)

4 T Cacao Beans (add extra for decoration)

4 T Chocolate Covered Hemp Seeds (you can use semi-sweet chips but you won’t get the benefit of the hemp)

2 T Maple Syrup or Honey

8 Chia Seeds T

2 C Almond Milk

*If you like chocolate + peanut butter, add 1 T of peanut butter (or almond butter) to the mix for that chocolate + peanut flavor.

How to:

Use the same method for instructions as above for Vanilla, Almond, Coconut pudding.

Once the pudding is done, sprinkle cocoa beans on top and enjoy!

I often make this recipe for breakfast because it’s an easy make-ahead meal prep option. Then you can eat quickly or grab and go before heading out the door. I also enjoy it as a healthy snack or dessert if I’m craving something sweet. Enjoy them however you like and feel free to be as creative with the recipe as you see fit.
